Every once in awhile, I enjoy a well-made Margarita on the rocks. I love the flavor of the salt rim, but not the unsightly look of flakes left on my upper lip.
Washington, DC's Oyamel Cocina Mexicana, owned by Jose Andres, found an inventive solution to my cocktail pet peeve. They top their Margaritas with salt air--kind of like a seafoam, if you will. Read about it in my recent article in Cheers magazine.
